Last moments before the beginning of Spring and here in the English countryside, you can feel the change. It’s not just the Spring flowers pushing through the ground and bringing colour and beauty to our world, but also the first bright green leaves appearing on the trees and hedges. It won’t be long until the countryside is full and abundant again and it fills me with optimism and pure joy!

Celebrate Spring by Baking Chunky Cookies with Mini Easter Eggs
I celebrate the coming of Spring by baking delicious, chunky cookies with mini Easter eggs!
I followed the recipe above but halved the amount of chocolate eggs and chips. After forming the dough into balls, I placed them in the fridge for the butter to harden, then baked them as per the instructions, leaving plenty of space around each ball, as the cookies will spread and turn out large! The recipe is simple and the cookies always come out great!
Light & Fresh Dinner Idea: Stuffed Peppers with Minced Meat
In this video, I’m also cooking dinner – stuffed peppers with minced meat – a perfect lighter meal for Spring and Summer, especially when served with a fresh green salad.
I skipped the onion and jalapeño pepper and instead added the chopped tops of the peppers and some chili flakes. I also used regular chopped canned tomatoes and cooked the minced meat until the water from the tomatoes evaporated, leaving the stuffing nice and thick.

Of course, this video is full of beautiful shots of the changing English countryside. I’m taking you on a trip to Branscombe – one of the oldest villages in the UK. We visit a cosy pub with a roaring fireplace and stroll around the grounds of Lytes Cary Manor in search of the signs of Spring.
