Easy & Healthy Roasted Califlower & Butter Beans

This flavourful and nutritious dish is Adriana's favourite. Cozy and warming this combination of cauliflower and beans perfect as a side, I often serve it instead of potatoes or rice. The cauliflower is roasted to perfection, bringing out its natural sweetness, paired with creamy butter beans, seasoned with aromatic spices, this dish is a true winner. I served it with peri-peri chicken breast, roasted courgettes, garlic yoghurt and fresh green salad.
Ingredients:
- 1 medium cauliflower, cut into florets
- 1 can butter beans, drained and rinsed
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- salt & pepper to taste

Preheat your oven to 425°F (220°C)

In a large baking dish, combine cauliflower florets, butter beans, olive oil and spices. Toss well until the cauliflower and beans are evenly coated.

Spread the cauliflower and butter beans in a single layer on the baking dish

Roast in the preheated oven for about 25-30 minutes or until the cauliflower is tender, stirring halfway through to ensure even cooking.

Once roasted, remove the baking dish from the oven and let the cauliflower and butter beans cool for a few minutes.
