3 Easy No-Bake Recipes for Valentine’s Day Desserts

Valentine's Day is a perfect occasion to treat your loved ones - and yourself - to delicious desserts. I'm sharing with you three no-bake recipes that are guaranteed to bring a smile to whoever you're celebrating with. Whether it’s your husband/partner, your best friend or an act of self-love - who doesn’t like a cheeky dessert?

I see cooking and baking as one of the forms of expressing love. Nourishing ourselves and the people that matter to us through a balanced yet delicious diet is one of the most vital parts of our lives. Equally, finding joy in sweet treats is one of life’s simple pleasures that - when done mindfully - reminds us that happiness doesn’t have to be big or complicated and is often hidden in everyday, ordinary things like a little chocolate or a homemade dessert.

1. 3-Ingredient Oreo Truffles

For this recipe, you’ll need:

  • 1 packet of Oreos (154g)
  • 40-50g of soft cheese (I used full-fat Philadelphia)
  • White chocolate (about 50g)
  • (Optional) Heart-shaped sprinkles

METHOD:

  1. Prepare a small tray lined with baking paper.

  2. Crush all the Oreos and add 40-50g of the cheese. Mix with a handheld mixer until fully combined. Try shaping a ball—if the mixture feels dry, add a bit more Philadelphia. If it’s too wet (hard to roll, sticks to your fingers), crush a few more Oreos and mix them in.

  3. Melt the white chocolate in the microwave - do it in short bursts and let it cool down slightly. Using two forks, dip the Oreo truffles into the chocolate and place them on the baking paper. Decorate your truffles with heart-shaped sprinkles before the chocolate sets.

  4. Place in the fridge for at least half an hour for the chocolate to harden and then chip off any excess chocolate that sticks out too much.

My notes:
You can store them in the fridge for a couple of days (they are usually gone quickly in my home).

2. Heart-Shaped Pancakes

My notes:
What I love about this recipe is how forgiving it is. I’ve made it with no eggs, substituted eggs with bananas and used oil instead of butter - it always turns out well! I can also never bring myself to use the full five tablespoons of butter/oil, I usually cut it in half and the pancakes are still great! Highly recommend this recipe.

3. Cream, Strawberry & Chocolate Layered Dessert

For this recipe, you’ll need:

  • Whipped cream (store-bought or homemade)
  • 2-3 digestive biscuits
  • Chocolate sauce
  • Fresh strawberries

METHOD:

  1. Choose glasses that are not too big, as you want the ingredients to fill at least 3/4 of the glass.

  2. Crush the biscuits into small pieces and slice the strawberries into small chunks.

  3. Assemble the dessert: Start with a layer of whipped cream, then add crushed biscuits, chocolate sauce, strawberries, and finish with whipped cream.

My notes:
If you serve this dessert immediately, the biscuits will be crunchy. If you let it sit in the fridge before serving, the biscuits will absorb moisture from the other ingredients and soften. Either way, they’ll add a lovely texture and a touch of saltiness to the dessert. It’s delicious both ways!

How to Make Whipped Cream

You’ll need:

  • A large bowl
  • A handheld mixer
  • Double cream
  • A sprinkle of powdered sugar

METHOD:
Simply pour the double cream into the bowl, add a little bit of sugar, and whip with a handheld mixer until it becomes thick. That’s it!

My notes:
Make sure you use good-quality double cream, as the fat content is what counts. Single cream won’t whip. Unfortunately, in the past, I tried one of the leading UK supermarkets’ own-brand double cream and it didn’t whip either. I always use Elmlea (dark blue pot).

All of these desserts are simple and quick to make and don’t require any baking. You can make them all in advance (even the pancakes - you can reheat them) and serve when needed. Let me know if you’re going to make any of these!
