I invite you to join me for another week in my slow living life here in the English countryside, now fully awakened by Spring. This week is full of peaceful days—homemaking, countryside walks, charity shop finds, homemade jam, and a little Easter sewing project. We visit Snowshill in bloom, chat about seasonal eating, and enjoy a cosy meal prepared by Andrei. It’s a slow and simple celebration of everyday life in the English countryside.

The Beauty of Spring in the English Countryside
England is in bloom, with trees blossoming wherever you go. These true Spring days feel like a balm for the soul, reminding us once again that after the long, cold Winter, spring always finds its way back. You can always trust in nature.
I’m loving the weather we’re having in Somerset. I go on countryside walks as often as possible and turn my face to the sun whenever I can. The hedgerows and trees are bursting with fresh green leaves - and it’s only the beginning.
Simple Chia Jam Recipe to Make at Home
In the video, I’m sharing a simple and delicious chia jam recipe, even my picky children love it! All you need is:
Ingredients:
- 500g frozen fruit (I used forest fruits)
- 1 to 2 tablespoons of chia seeds (I used 1.5 tbsp)
- 1 tablespoon lemon juice
- 3–6 tablespoons of sugar ( I used 4)
Method:
Cook the frozen fruits until they break down and become soft. Add the chia seeds, lemon juice, and sugar. Stir well and let it cool. Your jam will thicken as it sets.

Seasonal eating: Cooking with British Asparagus
Late April marks the start of British asparagus season, and we’ll be adding it to our meals often over the next couple of months.
In this week’s video, Andrei is cooking one of my favourite dishes: salmon with honey, soy sauce, and lemon, served with baby potatoes and roasted asparagus. He also added a handful of cherry tomatoes - delicious!

Spring in the Cotswolds & Visit to Snowshill in Bloom
While my mum was still visiting, we took a little day trip to the Cotswolds. The famous rolling hills are getting greener and full of life again. I filmed in the same location last year during harvest—the fields were golden and full—but now the cycle begins again. In just a few months, I’ll be sharing autumn landscapes with you once more. Time flies, and it only deepens my appreciation for slow living.
Andrei and I visited Snowshill, a place we hadn’t seen since late summer. It’s amazing how this place transforms with the seasons while still holding its timeless charm. I’ve seen the church in rain, sun, and fog—but never with cherry blossoms before. It took my breath away.

Sewing Easter Cottage Decorations
With Easter around the corner, I decided to make some handmade decorations for our Easter tree. I had an idea in mind but couldn’t find any photos online, so I had to rely on my imagination - and I’m glad I did!
I wanted to sew little fabric eggs with tiny pockets to tuck in small wildflowers. It’s a simple, rustic touch that turned out just how I pictured it.

Decorating Our Cottage-Style Home for Easter
I moved a blossoming branch from the kitchen to the living room and hung my handmade fabric eggs on it. I’m always a bit nervous to start new sewing projects -I’m still learning to use my sewing machine, but I’m happy with how everything turned out. It reminds me that trusting the process is part of the joy. The eggs, paired with our hand-poured candles inspired by the scents of the English countryside, make the perfect spring decor, fit for a cosy cottage in the English countryside... wherever you live.
